This is my bread recipe I have been making on Island Spirit. I now simply do one rising and it works just as well as two, provided you do a good job kneading the dough. Enjoy.
2 packs rapid rise yeast
3 tsp salt
3 TBS sugar
6 cups bread flour
1/2 to 3/4 cup oatmeal
Mix this together very well to distribute the yeast
Heat water to 115 degrees
Add 2 1/4 cups of water to flour mixture
Add 3 TBS oil
Stir water, oil and flour to mix
Knead 5+ minutes into a smooth dough
Add more flour if sticky
Cut into two pieces
Knead into loaf shapes
Spray Pam into 2 bread pans 9 x 5
Place loaves into pans
Cover with wax paper sprayed w/Pam
Place each pan into a plastic bag, tie shut to keep in heat
Let rise 1 hr or until risen over top
Carefully remove the waxed paper
Bake in oven at 325 for 30 minutes until golden brown on top
Note
Bake 15 min, then rotate pans 180 and change positions left to right. This bakes more evenly.
When finished, turn out onto plates and cool.....or....eat a slice warm! Emm emm good.
